A no-bake Berrylicious Strawberry Crunch Cheesecake with a creamy filling, golden crust, and strawberry crunch topping. Perfect for easy dessert recipes for families and quick family desserts.
Ingredients
For the crust:
2 cups crushed graham crackers (or Golden Oreos for extra vanilla flavor)
½ cup unsalted butter, melted
For the filling:
16 ounces (2 packages) cream cheese, softened
½ cup powdered sugar
1 tsp vanilla extract
2 cups heavy whipping cream, whipped to stiff peaks
For the strawberry crunch topping:
1 cup crushed freeze-dried strawberries
1 cup crushed Golden Oreos or vanilla wafers
¼ cup melted butter
Optional: ¼ cup strawberry jam for drizzling
Instructions
1. Prepare the crust: Mix crushed graham crackers and melted butter until combined. Press into a 9-inch springform pan. Chill 15 minutes.
2. Make the filling: Beat cream cheese, powdered sugar, and vanilla until smooth. Fold in whipped cream until combined.
3. Assemble the cheesecake: Spread filling over crust. For a double layer, add strawberries and jam between filling.
4. Create the strawberry crunch: Mix freeze-dried strawberries, cookies, and butter.
5. Add topping and chill: Sprinkle topping over cheesecake. Chill at least 4 hours or overnight.
6. Serve: Slice, release from pan, and garnish with fresh strawberries.
Notes
For the best crust, press it down firmly with a spoon.
Soften cream cheese to room temperature to avoid lumps.
Freeze-dried strawberries give the crunch topping its texture don’t substitute fresh.
Cheesecake slices cleanly after chilling overnight.
