Light, fluffy, and high in protein, this Blueberry Fluffy Cottage Cheese Cloud Bread is perfect as a healthy snack, low-carb breakfast, or even a sweet treat.
Ingredients
3 large eggs, separated
½ cup full-fat cottage cheese, drained and blended until smooth
1 tablespoon cornstarch
¼ teaspoon cream of tartar
1 tablespoon powdered sweetener (optional)
½ teaspoon vanilla extract (optional)
½ teaspoon lemon zest (optional)
½ cup fresh blueberries
Instructions
1. Preheat oven to 300°F (150°C) and line a baking tray with parchment.
2. Drain cottage cheese and blend until creamy.
3. Whip egg whites with cream of tartar until stiff peaks form.
4. In another bowl, whisk yolks with cottage cheese, cornstarch, sweetener, vanilla, and zest.
5. Gently fold yolk mixture into egg whites, keeping it airy.
6. Fold in blueberries carefully without deflating batter.
7. Scoop batter (¼ cup portions) onto tray and bake 25–30 minutes until golden.
8. Cool slightly, then serve warm or at room temperature.
Notes
Keep the batter airy overmixing deflates it.
Pat blueberries dry to avoid streaks.
Bread firms up as it cools, so don’t worry if it feels soft at first.
