Ingredients
8 slices brioche or challah bread, cut thick
6 strips thick-cut bacon
4 large eggs
120 ml whole milk
1 tablespoon vanilla extract
0.25 teaspoon ground cinnamon
30 g unsalted butter
Filling and Glaze
60 g cream cheese, softened
240 ml pure maple syrup
30 ml bourbon
1 teaspoon vanilla extract
Pinch fine salt
Instructions
1. Bake thick-cut bacon on a rack at 200°C until crisp, then chop finely.
2. Mix softened cream cheese with chopped bacon until smooth.
3. Whisk eggs, milk, vanilla, and cinnamon in a shallow bowl to make the custard.
4. Cut pockets into brioche slices, fill with bacon-cream cheese mixture, and press gently to close.
5. Dip stuffed slices into custard, then fry in butter for 3–4 minutes per side until golden brown.
6. Warm maple syrup with bourbon, vanilla, and a pinch of salt; pour generously over each toast.
7. Serve immediately with fresh berries or candied pecans for garnish.
