Cheesy Cajun Garlic Chicken Rotini Skillet Recipe is creamy, bold, and quick. Perfect for busy weeknights or family dinners under 30 minutes.
Ingredients
2 boneless, skinless chicken breasts, cut into bite-sized chunks
12 oz rotini pasta
2 tablespoons olive oil
2 tablespoons Cajun seasoning
1 teaspoon garlic powder
1/2 teaspoon onion powder
Salt and pepper, to taste
4 cloves garlic, minced
1 tablespoon butter
1 cup heavy cream
1/2 cup chicken broth
1 cup shredded mozzarella cheese
1/2 cup grated Parmesan cheese
1/2 cup shredded cheddar cheese
Fresh parsley, chopped, for garnish
Instructions
1. Heat olive oil in a large skillet. Toss chicken with Cajun seasoning, garlic powder, onion powder, salt, and pepper. Sear 5–7 minutes until golden. Remove and set aside.
2. Melt butter in the same skillet. Add minced garlic, cook 1 minute until fragrant. Pour in heavy cream and broth. Stir well, scraping browned bits.
3. Add mozzarella, Parmesan, and cheddar. Stir until cheese melts into a smooth sauce.
4. Meanwhile, cook rotini pasta in salted boiling water until al dente. Reserve 1/2 cup pasta water, then drain.
5. Add cooked rotini to the skillet. Toss until pasta is coated in sauce. Thin with pasta water if needed.
6. Return chicken to the skillet. Stir to combine and heat through.
7. Taste and adjust seasonings. Garnish with parsley. Serve hot.
Notes
Make it lighter: Swap half the cream with Greek yogurt.
Make it spicier: Add extra Cajun seasoning or red pepper flakes.
