Ingredients
4 ears fresh corn, husked
¼ cup (½ stick) unsalted butter, softened
2 garlic cloves, minced
1 tbsp chopped fresh parsley
½ tsp salt
¼ tsp black pepper
½ cup grated Parmesan cheese
1 tsp lemon zest (optional)
Instructions
1. Bring a pot of salted water to boil. Cook corn until tender, about 10 minutes. Or grill over medium-high heat, turning until lightly charred.
2. In a small bowl, mix butter, garlic, parsley, salt, pepper, and lemon zest until smooth.
3. Brush warm corn with garlic butter mixture, coating all sides evenly.
4. Roll each ear in parmesan cheese, pressing gently so it sticks.
5. Serve hot, sprinkled with extra parsley and parmesan if desired.
Notes
Make-ahead: Garlic butter can be prepped 3 days ahead.
Storage: Wrap leftovers in foil and refrigerate 3 days.
Reheat: Oven at 350°F or air fryer for crisp edges.
