Crispy, golden Cheesy Mozzarella Onion Rings that are stuffed with gooey mozzarella and wrapped in a crunchy Panko coating perfect as a party appetizer or a kid-friendly dinner snack.
Ingredients
1 large onion, sliced into thick rings
8 mozzarella cheese sticks
1 cup milk
1 egg, beaten
1 cup Panko breadcrumbs
2 cups cooking oil (try healthy frying oil options)
Toothpicks for securing
1 teaspoon baking powder
1 cup all-purpose flour
1 teaspoon fine salt
Instructions
1. Pair a large onion slice with a smaller one inside, leaving a gap. Slice mozzarella to fit and secure with a toothpick.
2. Mix flour, baking powder, and salt. Dredge each assembled ring in the mix and set on a wire rack.
3. Whisk milk and egg together. Stir into the dry mix until smooth.
4. Dip each ring in batter, let excess drip, then coat with Panko. Place back on the rack.
5. Heat oil to 350°F (175°C). Fry a few at a time until golden, turning once.
6. Drain on paper towels, remove toothpicks, and serve hot with marinara.
Notes
For extra crunch, double-coat the rings before frying.
Freeze assembled rings for 15 minutes before frying to reduce cheese leakage.
