Description

Chicken Scampi with Creamy Garlic Parmesan Rice is a comforting one-pan dinner that combines zesty lemon, garlic butter, and rich Parmesan in every forkful ready in just 30 minutes.


Ingredients

1 lb boneless, skinless chicken breasts (cut into bite-sized pieces)

2 tablespoons olive oil

1 tablespoon unsalted butter

1 teaspoon Italian seasoning

½ teaspoon crushed red pepper flakes (optional)

1 teaspoon salt

⅛ teaspoon black pepper

4 cloves garlic, minced

Juice of 1 lemon and zest of ½ lemon

1½ cups long-grain white rice

3 cups chicken broth

½ cup heavy cream

1 cup grated Parmesan cheese

1 tablespoon chopped fresh parsley (for garnish)

Extra lemon wedges for serving


Instructions

1. Heat olive oil and butter in a large deep skillet over medium-high heat.

2. Season chicken with Italian seasoning, salt, pepper, and red pepper flakes. Add to skillet and cook until golden and fully cooked through. Remove and set aside.

3. Lower heat to medium. Add garlic and sauté for 30 seconds until fragrant.

4. Add lemon juice and zest. Stir gently.

5. Add uncooked rice. Stir to coat in garlic-lemon mixture and toast for 2 minutes.

6. Pour in chicken broth. Bring to a boil. Then reduce heat to low, cover, and simmer for 18–20 minutes until the rice is tender and liquid absorbed.

7. Stir in heavy cream and Parmesan cheese until melted and creamy.

8. Return chicken to the pan or serve it over the rice. Garnish with parsley and extra lemon.


Notes

Use freshly grated Parmesan for the best flavor and texture.

Make it gluten-free by swapping with certified gluten-free broth and checking cheese labels.

Can substitute half-and-half for a lighter version.

Refrigerate leftovers in an airtight container for up to 3 days.
