1 pound lean ground beef
4-6 medium Russet potatoes, peeled and diced
1 packet (1 ounce) taco seasoning
1/2 cup water
1 cup shredded cheddar cheese
2 tablespoons olive oil
1 teaspoon garlic powder
1 teaspoon onion powder
Salt and pepper to taste

Instructions
1. Roast the Potatoes
Preheat your oven to 400°F. Toss diced potatoes with olive oil, garlic powder, onion powder, salt, and pepper. Spread them onto a baking sheet and roast for 20–25 minutes until golden and tender.
2. Brown and Season the Beef
While the potatoes bake, cook your ground beef in a skillet until browned. Drain any grease, then sprinkle in taco seasoning and water. Simmer until thickened, about 2–3 minutes.
3. Layer & Bake Again
Transfer roasted potatoes to a lightly greased baking dish. Spoon the taco meat evenly over them. Sprinkle the cheddar cheese on top and return to the oven for 8–10 minutes until melted and bubbly.
4. Finish & Serve
Let cool slightly before topping with sour cream, tomatoes, green onions, and a bit of cilantro—or jalapeños if you like a kick.
