Comforting Cheesy Taco Potatoes are the ultimate one-dish dinner—roasted potatoes, taco-seasoned beef, and melted cheese baked together. It’s easy, filling, and full of flavor.
Ingredients
1 pound lean ground beef
4–6 medium Russet potatoes, peeled and diced
1 packet taco seasoning (1 ounce)
1/2 cup water
1 cup shredded cheddar cheese
2 tablespoons olive oil
1 teaspoon garlic powder
1 teaspoon onion powder
Salt and pepper to taste
Optional: sour cream, diced tomatoes, green onions, cilantro, jalapeños
Instructions
Step 1: Roast the Potatoes
Preheat your oven to 400°F. Toss diced potatoes with olive oil, garlic powder, onion powder, salt, and pepper. Spread on a sheet pan. Roast 20–25 minutes until golden and tender.
Step 2: Brown and Season the Beef
While potatoes roast, cook the beef in a skillet until browned. Drain excess grease. Stir in taco seasoning and water, simmering 2–3 minutes until thick.
Step 3: Layer & Bake Again
Transfer potatoes to a greased baking dish. Top with taco meat. Sprinkle cheddar over everything. Bake another 8–10 minutes until the cheese melts bubbly.
Step 4: Finish & Serve
Let cool slightly. Top with sour cream, tomatoes, green onions, cilantro, or jalapeños if you want spice.
