Ingredients
4 bone-in pork chops, about 1-inch thick
250ml buttermilk for marinating
125g all-purpose flour
1 tsp salt
½ tsp black pepper
½ tsp paprika
½ tsp garlic powder
½ tsp onion powder
60ml vegetable oil for frying
→ For the bacon gravy:
4 slices thick-cut bacon, chopped
30g unsalted butter
16g all-purpose flour
360ml whole milk
½ tsp salt
½ tsp black pepper
Instructions
1. Lay pork chops in a shallow dish and pour over the buttermilk. Marinate at room temperature for 30 minutes.
2. In a separate dish, mix flour, salt, pepper, paprika, garlic powder, and onion powder.
3. Heat vegetable oil in a large skillet over medium until shimmering.
4. Remove each pork chop from the buttermilk, let excess drip off, and dredge in flour mixture.
5. Fry each pork chop for 4–5 minutes per side, until golden and cooked through.
6. In a clean skillet, cook chopped bacon until crisp. Remove bacon, leave fat in pan.
7. Add butter to bacon fat and melt. Stir in flour and cook for 1 minute to form a roux.
8. Slowly whisk in milk, simmer until thickened. Stir in bacon bits.
9. Serve pork chops hot with bacon gravy ladled over the top.
Notes
Use a thermometer to check pork doneness 145°F is perfect.
