Description

Cranberry-Almond Pull-Apart Bread is a festive holiday baking recipe with fresh cranberries, almonds, and vanilla glaze. Perfect for holiday breakfast ideas, brunch, or easy homemade bread recipes.


Ingredients

For the Dough:

3 cups all-purpose flour

2 ¼ teaspoons (1 packet) active dry yeast

¼ cup sugar

½ teaspoon salt

¾ cup warm milk (about 110°F / 43°C)

¼ cup unsalted butter, melted

2 large eggs

For the Filling & Topping:

1 ½ cups fresh or frozen cranberries (not dried)

½ cup sugar (to toss with cranberries)

½ cup sliced almonds

2 tablespoons unsalted butter, melted (for brushing dough)

For the Glaze:

1 cup powdered sugar

2–3 tablespoons milk (or cream)

½ teaspoon vanilla extract


Instructions

1. Activate Yeast: In a bowl, combine warm milk, sugar, and yeast. Let sit 5–10 minutes until foamy.

2. Make Dough: Add melted butter, eggs, flour, and salt. Mix and knead for 8–10 minutes until smooth and elastic.

3. First Rise: Place dough in a greased bowl, cover, and let rise until doubled (about 1–1 ½ hours).

4. Prepare Cranberries: Toss cranberries with sugar to coat and sweeten.

5. Shape Dough: Roll dough into a rectangle, brush with butter, scatter cranberries and almonds evenly.

6. Cut & Layer: Slice into strips, stack, cut into squares, and layer upright in a greased loaf pan.

7. Second Rise: Cover and let rise 30–40 minutes until puffy.

8. Bake: Preheat oven to 350°F (175°C). Bake 30–35 minutes until golden. Tent with foil if browning too quickly.

9. Glaze: Whisk powdered sugar, milk, and vanilla until smooth. Drizzle over warm bread and add extra almonds.


Notes

Best served warm and fresh out of the oven.

Freeze without glaze for up to 1 month.

Try variations: orange zest, cream cheese swirl, or pistachios for new flavors.
