Description
A creamy bean soup with kielbasa for busy moms. High-protein, freezer-friendly, and perfect for easy family dinner recipes.
Ingredients
1 tablespoon vegetable oil
2 rings (13 ounces each) kielbasa, sliced
3 tablespoons unsalted butter
1 large yellow onion, chopped
2 medium carrots, diced
2 teaspoons garlic, minced
½ teaspoon kosher salt
½ teaspoon black pepper
¼ cup all-purpose flour
3 cups chicken broth
1 cup whole milk
2 tablespoons Worcestershire sauce
2 cans Great Northern white beans, rinsed and drained
Parsley, for garnish
Instructions
1. Heat oil in a pot. Brown sliced kielbasa until golden, set aside.
2. Melt butter. Add onion, carrots, garlic, salt, and pepper. Cook until soft.
3. Sprinkle flour, stir. Add broth, milk, Worcestershire. Simmer until slightly thickened.
4. Return kielbasa. Add beans. Stir and let it thicken 15–20 minutes.
5. Ladle into bowls. Garnish with parsley. Serve warm.
Notes
For lighter soup: swap cream with pureed beans and spinach.
For Cajun spice: use andouille sausage and smoked paprika.
For vegetarian: skip sausage, add smoked paprika for depth.
This freezes best without milk. Reheat gently with splash of milk.
