Ingredients
1 ½–2 lb beef chuck roast
Salt and ground black pepper
14 oz beef broth
½ cup salsa
1 ½ tablespoons chili powder
1 teaspoon garlic powder
½ tablespoon cumin
1 teaspoon dry minced onion powder
20 corn tortillas
Oil for frying

Instructions
1. Season roast with salt and pepper. Add broth, salsa, and spices. Cook on low 7–8 hours until tender.
2. Remove roast, shred with forks, trim fat. Return meat to broth to stay warm.
3. Warm tortillas. Spoon beef, tuck in cheese, roll tight. Pin with toothpick.
4. Heat oil. Fry taquitos in batches until golden and crisp. Drain on paper towel.
5. Top with extra cheese, salsa, or sour cream. Serve immediately.
Notes
Corn tortillas give the best crunch. Flour tortillas work, but the texture changes.
Make-ahead: roll and freeze before frying for quick family meals.
Use air fryer or oven for a lighter alternative.
