Golden crispy zucchini chips served with creamy basil mayo. A light and crunchy snack perfect for healthy party snacks ideas or quick family dinner sides.
Ingredients
2 medium zucchini, sliced into 1/4-inch rounds
1/2 cup flour (gluten-free if you like)
2 eggs, lightly beaten
2 cups panko breadcrumbs (or gluten-free panko)
1/2 cup grated parmesan cheese
1 tablespoon lemon zest
Salt and pepper, to taste
1/2 cup mayonnaise
1/4 cup fresh basil
Instructions
1. Dredge zucchini slices in flour, dip in egg, then coat in panko, parmesan, lemon zest, salt, and pepper.
2. Frying option: Heat oil in skillet. Cook 2–3 minutes per side until golden.
3. Baking option: Preheat oven to 425°F (220°C). Place slices on rack, spray lightly with oil, bake 15–20 minutes.
4. Make the basil mayo: Blend mayonnaise and basil until smooth.
5. Serve: Plate zucchini chips hot with basil mayo on the side for dipping.
Notes
For baked zucchini chips, always use a wire rack for airflow.
For air fryer zucchini chips, cook at 400°F for 10–12 minutes.
For gluten-free zucchini chips, swap with GF flour and GF panko.
For vegan zucchini chips, use aquafaba instead of egg and vegan mayo.
