Description

This delicious lasagna baked potato recipe combines crisp baked potatoes with layers of beef, ricotta, marinara, and mozzarella. Comfort food with no fuss.


Ingredients

2 large russet potatoes

Olive oil, for rubbing

Salt and pepper, to taste

Optional: garlic powder or Italian seasoning

½ lb ground beef

½ small onion, finely chopped

1 garlic clove, minced

½ cup marinara or pasta sauce

1 tablespoon tomato paste

1 teaspoon Italian seasoning

Salt and pepper, to taste

½ cup ricotta cheese

½ teaspoon garlic powder

½ teaspoon dried parsley

1 cup shredded mozzarella cheese

2 tablespoons grated Parmesan cheese

Fresh parsley or basil for garnish


Instructions

1. Preheat oven to 400°F. Scrub and dry potatoes. Prick and rub with olive oil and season. Bake for 45–60 minutes.

2. In a skillet, brown ground beef. Add onion and garlic. Stir in marinara, tomato paste, seasoning. Simmer 5–10 minutes.

3. In a bowl, mix ricotta, garlic powder, and parsley.

4. Slice baked potatoes open. Fluff insides. Add ricotta, meat sauce, mozzarella.

5. Top with extra mozzarella and Parmesan. Bake 10–12 minutes more.

6. Garnish with parsley or basil and serve hot.


Notes

Use sweet potatoes for a flavor twist. Make ahead and bake fresh before serving. Cottage cheese works well in place of ricotta.
