Description
Crispy, cheesy, and packed with savory dill pickle and bacon flavor, these Dill Pickle Cheeseburger Mozzarella Bombs are the perfect high-protein comfort food for weeknights, parties, or after-school snacks.
Ingredients
8 mozzarella sticks, halved to make 16 pieces
½ lb ground beef, cooked and seasoned
4 strips turkey bacon, cooked and finely crumbled
½ cup shredded cheddar cheese
½ cup finely chopped dill pickles
1 tbsp dill pickle juice
1 can refrigerated biscuit dough
1 egg, beaten
¾ cup panko breadcrumbs
2 tbsp melted butter
1 tsp garlic powder
1 tsp dried dill
Optional: fresh chopped dill or parsley for garnish
Instructions
1. Preheat your oven to 375°F (190°C). Line a baking sheet with parchment paper.
2. In a bowl, stir together the cooked beef, turkey bacon, cheddar, chopped pickles, and pickle juice.
3. Flatten each biscuit dough piece into a 3-inch circle. Place a spoonful of filling in the center, then top with a mozzarella piece.
4. Wrap the dough around the filling, sealing the edges. Use egg as glue if needed. Roll into a ball.
5. Mix panko, garlic powder, and dried dill. Brush dough balls with melted butter and roll in the breadcrumb mixture.
6. Bake for 13–16 minutes or air fry at 375°F for 8–10 minutes, shaking halfway.
7. Let them cool slightly. Garnish with fresh dill or parsley if desired. Serve warm with dipping sauces.
Notes
You can prepare the beef filling ahead of time and refrigerate it until you’re ready to assemble.
Try dipping in ranch, garlic aioli, or classic ketchup.
For a spicier twist, stir in chopped jalapeños with the filling.
