Homemade Dreamsicle Jelly combines fresh orange juice, sugar, and vanilla beans for a bright, comforting spread. Perfect for breakfast, holiday gift basket recipes, or unique dessert spreads.

Ingredients

4 cups sugar

2 vanilla beans, split and scraped

Pat of butter

1 box pectin : optional

Instructions

Strain the orange juice through cheesecloth to remove pulp.

In a large pot, combine juice, sugar, butter, and vanilla bean scrapings with pods.

Bring mixture to a hard boil.

If using pectin, add the box now. Stir and boil for 1 minute. Without pectin, cook until 220°F and hold 3 minutes.

Remove vanilla pods. Ladle jelly into jars, leaving 1/4 inch headspace.

Wipe rims, apply lids, and screw on bands.

Process jars in boiling water canner for 10 minutes.

Cool jars on a towel, flipping every 10 minutes to distribute vanilla specks.

Check seals, store sealed jars in pantry. Refrigerate unsealed jars.

Notes

For a low-sugar option, use reduced-sugar pectin or stevia.

For a boozy twist, add a splash of Grand Marnier or Cointreau.

Jars make great additions to holiday gift basket recipes.
