Ingredients
1 large tortilla (whole wheat, white, or gluten-free)
½ cup fresh or frozen blueberries
1 tablespoon cream cheese or Greek yogurt
1 teaspoon honey or maple syrup
¼ teaspoon ground cinnamon (optional)
¼ cup shredded mozzarella or mild cheddar cheese
1 teaspoon butter or coconut oil for cooking
Powdered sugar or honey for topping
Instructions
1. In a bowl, mix cream cheese (or Greek yogurt), honey, and cinnamon until smooth.
2. Spread the cream mixture evenly over one half of the tortilla.
3. Sprinkle shredded cheese and scatter blueberries on top.
4. Fold tortilla in half and press gently to secure.
5. Heat butter or oil in a skillet over medium heat. Cook quesadilla 2–3 minutes per side until golden and crisp.
6. Rest for 1 minute, slice into wedges, and dust with powdered sugar or drizzle honey.
