Ingredients
1 cup unsalted butter, melted
1½ cups brown sugar, packed
2 large eggs
2 teaspoons vanilla extract
2 cups all-purpose flour
1 teaspoon baking powder
1/2 teaspoon salt
1 cup butterscotch chips
3/4 cup toffee bits
Instructions
1. Preheat oven to 350°F (175°C). Lightly grease a 9×13-inch baking pan or line with parchment paper.
2. In a large bowl, whisk together the melted butter and brown sugar until smooth.
3. Add the eggs and vanilla extract, whisking until fully combined.
4. In another bowl, mix the flour, baking powder, and salt.
5. Gradually add this dry mix to the wet ingredients, stirring gently to form a soft dough.
6. Fold in the butterscotch chips and toffee bits until evenly distributed.
7. Spread the batter evenly in the prepared pan and smooth the top with a spatula.
8. Bake for 25–30 minutes, or until the top is golden and a toothpick inserted in the center comes out clean.
9. Let cool in the pan for at least 20 minutes before slicing into bars.
Notes
Store in an airtight container for up to 5 days.
Freeze individually wrapped bars for up to 2 months.
Use almond flour and coconut sugar for a low-cholesterol option.
