Description

These easy chicken bell pepper ranch burritos are perfect for busy weeknights. High in protein, full of flavor, and great for meal prep.


Ingredients

2 cups cooked chicken, shredded (Rotisserie chicken works great)

1 cup bell peppers, chopped (any color)

½ cup ranch dressing

1 cup shredded cheese (cheddar or your favorite)

4 large flour tortillas

1 can black beans, drained (optional)

½ cup corn (optional)

Salt and pepper to taste


Instructions

Step 1: Prepare the chicken
If you’re not using rotisserie, cook and shred your chicken first. It’s the heart of this recipe and makes these burritos a real go-to among easy chicken recipes.

Step 2: Sauté the peppers
In a skillet over medium heat, add a little oil and sauté the bell peppers for 3–4 minutes until just tender but still bright. This gives your filling a fresh pop.

Step 3: Mix the filling
In a large bowl, combine the chicken, sautéed peppers, ranch dressing, black beans, and corn (if using). Season with salt and pepper. Stir until everything is coated and creamy.

Step 4: Warm the tortillas
Heat tortillas in a dry skillet or microwave until soft and pliable—this makes them easier to fold without tearing.

Step 5: Build the burritos
Spoon one-fourth of the filling into each tortilla. Sprinkle with cheese, then fold the sides and roll tightly from bottom to top.

Step 6: Optional—crisp the outside
For extra crunch, place burritos seam-side down on a hot skillet for 2–3 minutes until golden. Flip and repeat.

Step 7: Serve and enjoy
