Description
Chewy and sweet, these Easy Coconut Toffee Chocolate Chip Cookie Bars are layered with coconut, chocolate, and toffee for the perfect dessert squares.
Ingredients
CRUST:
1 1/4 cups all-purpose flour
1 cup old-fashioned oats
2 cups flaked coconut
1/2 tsp salt
3/4 cup brown sugar
1 cup butter, softened
1 egg, lightly beaten
12 oz semi-sweet chocolate chips
FILLING:
14 oz sweetened condensed milk
1/4 cup Karo Light Corn Syrup
8 oz toffee bits
Instructions
1. Preheat oven to 350°F.
2. Mix flour, oats, coconut, and brown sugar. Add butter and egg. Stir in chocolate chips. Press most into a greased 13×9 pan.
3. Bake crust 10 minutes.
4. Mix condensed milk and corn syrup. Pour over hot crust. Sprinkle with toffee bits.
5. Top with reserved dough and bake 25–30 minutes until golden.
6. Cool completely, then cut into bars. Serve warm or at room temperature.
Notes
Bars keep 5 days at room temperature or 2 weeks refrigerated.
Freeze up to 3 months with parchment between layers.
For gifting: wrap in cellophane or tins.
Swap with unsweetened coconut if you want less sweetness.
