Description
A rich, gooey, and golden Easy Dubai Style Chocolate Cookie Pie layered with pistachio crème, chocolate chips, and crispy kataifi dough for texture and surprise.
Ingredients
200g unsalted butter, softened
250g light brown sugar
1 large egg
1 tsp vanilla extract
320g plain flour
½ tsp bicarbonate of soda
200g chocolate chips (plus extra for topping)
300–350g pistachio crème spread
130g kataifi dough, toasted in 10g butter
Instructions
1. Preheat oven to 180°C (160°C fan) and line a 9-inch cake tin.
2. Beat butter and sugar until creamy. Add egg and vanilla, mix gently.
3. Sift in flour and bicarb. Mix until dough forms.
4. Fold in chocolate chips.
5. Press half the dough into the tin base and slightly up the sides.
6. Spread pistachio crème over the base.
7. Top with toasted kataifi, pressing gently.
8. Patch remaining dough over the top, sprinkle extra chips.
9. Bake for 22–28 minutes until golden but soft in the center.
10. Cool slightly before slicing. Serve warm.
Notes
Serve warm with pistachio or vanilla ice cream.
Top with a drizzle of dark chocolate for extra richness.
