Description

A cozy, make-ahead breakfast bake layered with fluffy pancakes and savory sausage, finished with a golden top and a drizzle of maple syrup.


Ingredients

Scale

1 lb breakfast sausage, cooked and crumbled

2 cups all-purpose flour

2 tablespoons sugar

2 teaspoons baking powder

½ teaspoon baking soda

½ teaspoon salt

2 large eggs

2 cups buttermilk

¼ cup melted butter (plus extra for greasing)

1 teaspoon vanilla extract

Maple syrup, for serving


Instructions

1. Preheat oven to 350°F (175°C) and grease a 9×13-inch baking dish.

2. In a skillet, cook sausage until browned and crumbled. Set aside.

3. In one bowl, mix dry ingredients. In another, beat eggs and add buttermilk, melted butter, and vanilla. Combine.

4. Cook 6–8 medium pancakes on a skillet until golden.

5. Layer pancake, sausage, pancake in baking dish, pressing gently.

6. Cover with foil and bake for 25 minutes. Remove foil and bake 5 more minutes to crisp top.

7. Serve slices warm with maple syrup.


Notes

For extra flavor, add shredded cheddar cheese between layers.

You can prep this the night before and bake in the morning.
