Description

This fruity pebbles cheesecake no bake is colorful, creamy, and easy to make. With a chewy cereal crust and marshmallow cheesecake filling, it’s fun for all ages.


Ingredients

**Crust Ingredients**

3 ½ cups Fruity Pebbles cereal

3 cups mini marshmallows

2 tablespoons unsalted butter

**Cheesecake Filling Ingredients**

16 oz cream cheese, softened

¼ cup powdered sugar

1 teaspoon vanilla extract

7 oz tub marshmallow creme

1 ½ cups Fruity Pebbles cereal, lightly chopped


Instructions

1. In a large microwave-safe bowl, combine cereal, marshmallows, and butter. Microwave on high for 2–3 minutes until marshmallows puff up.

2. Stir until cereal is well coated, then press mixture into a greased pie plate to form a crust. Set aside.

3. In a separate bowl, mix cream cheese, powdered sugar, and vanilla until smooth. Add marshmallow creme and mix until fluffy.

4. Fold in chopped cereal with a spatula.

5. Spoon filling over the crust and smooth the top.

6. Chill in the fridge for 1–2 hours, or freeze for 30 minutes.

7. Top with more Fruity Pebbles or sprinkles if desired, then slice and serve.


Notes

You can make this a day ahead—just store it covered in the fridge.

For a firmer texture, chill overnight or use the freezer method.

Use rainbow sprinkles or mini chocolate chips for topping variety.
