These Fruity Pebbles Cookie Cheesecake Bars are soft, creamy, and bursting with color and crunch. A fun, kid-friendly twist on classic cheesecake bars.
Ingredients
1 package sugar cookie dough (16 oz)
1 cup Fruity Pebbles cereal, divided
8 oz cream cheese, softened
1/4 cup granulated sugar
1 large egg
1 teaspoon vanilla extract
Instructions
Step 1: Prep your pan and oven
Preheat to 350°F (175°C). Lightly grease an 8×8-inch pan or line with parchment.
Step 2: Mix the cookie base
Gently fold ½ cup of Fruity Pebbles into the cookie dough until the colors peek through evenly.
Step 3: Press the bottom layer
Take two-thirds of the dough and press it into the pan. Smooth it out like a foundation you can trust.
Step 4: Make the cheesecake filling
Beat cream cheese, sugar, egg, and vanilla until smooth and dreamy. No lumps just silk.
Step 5: Build the bars
Spread the cheesecake filling over the base. Crumble the leftover dough on top and finish with the rest of the Fruity Pebbles.
Step 6: Bake and cool
Bake 25–30 minutes until edges are golden and the center just set. Cool completely, then chill for at least 1 hour before slicing.
Notes
For clean slices, use a hot knife.

Store chilled up to 4 days or freeze up to 2 months.
