Description
A chilled BLT-inspired salad with grilled chicken, crispy bacon, cucumber, and creamy ranch. Fresh, flavorful, and ready in minutes.
Ingredients
2 boneless, skinless chicken breasts
1 tablespoon olive oil
1 teaspoon garlic powder
Salt and pepper, to taste
6 slices bacon, cooked and crumbled
1 English cucumber, thinly sliced
1 cup cherry tomatoes, halved
4 cups chopped romaine or iceberg lettuce
1/4 small red onion, thinly sliced (optional)
1/2 cup ranch dressing
Freshly ground black pepper, for garnish
Instructions
1. Rub chicken with olive oil, garlic powder, salt, and pepper. Grill 5–6 minutes per side. Rest, then slice.
2. Cook bacon until crisp. Drain on paper towels and crumble.
3. In a bowl, mix lettuce, cucumbers, tomatoes, and onion.
4. Add grilled chicken and bacon on top.
5. Drizzle with ranch dressing and toss gently.
6. Crack fresh black pepper on top. Serve immediately or chill for 10 minutes.
Notes
Add croutons, avocado, or jalapeño for variety.
Use rotisserie chicken for a shortcut.
Wait to dress until serving if prepping ahead.
