Description

This Hawaiian Huli Huli Chicken Stack is a tropical twist on clean eating chicken dinners. Juicy grilled chicken is layered with charred pineapple, brushed in a sweet and savory marinade an easy dinner recipe for families that tastes like an island escape.


Ingredients

→ Marinade

1 tablespoon sesame oil

1 teaspoon grated fresh ginger

2 cloves garlic, finely chopped

2 tablespoons packed brown sugar

1/4 cup soy sauce

1/2 cup pineapple juice

1 cup teriyaki sauce

→ Chicken and Pineapple

1 ripe pineapple, cut into circles

4 pieces boneless, skinless chicken thighs or breasts

→ Garnish

Chopped green onions

Toasted sesame seeds


Instructions

1. Mix the marinade: In a bowl, stir together pineapple juice, soy sauce, brown sugar, garlic, ginger, sesame oil, and teriyaki sauce.

2. Marinate the chicken: Place chicken in a dish or zip-top bag. Pour marinade over it. Cover and chill for at least 2 hours or overnight.

3. Heat the grill: Preheat your grill to medium-high heat.

4. Grill the chicken: Remove chicken from marinade (save the extra). Grill for 6–7 minutes per side, brushing occasionally with reserved marinade. Cook until internal temp hits 165°F.

5. Grill the pineapple: Place pineapple slices directly on grill. Grill 2–3 minutes per side until caramelized.

6. Stack and serve: Layer each chicken piece with a grilled pineapple ring. Garnish with green onions and sesame seeds. Serve hot.


Notes

Always discard any leftover marinade that touched raw chicken.

Let the chicken rest a few minutes after grilling for juicier bites.

Pairs well with jasmine rice or coconut rice for full island flavor.
