Description
Juicy honey garlic chicken bites seared to golden, glazed perfection over creamy, cheesy rice. A fast, family-friendly, high-protein comfort meal.
Ingredients
1½ lbs boneless, skinless chicken breasts, cut into bite-sized pieces
2 tbsp olive oil
Salt and black pepper, to taste
½ tsp garlic powder
5 cloves garlic, minced
¼ cup honey
2 tbsp soy sauce
1 tbsp apple cider vinegar
1 tbsp butter
1½ cups jasmine or white rice
3 cups chicken broth
1 cup heavy cream
1 cup shredded mozzarella cheese
½ cup cream cheese, softened
½ cup grated Parmesan cheese
1 tbsp butter
Salt and pepper, to taste
1 tsp Italian seasoning
Fresh parsley, for garnish
Instructions
1. Add rice and chicken broth to a pot. Bring to boil, cover, and simmer 15 minutes until tender.
2. Stir in butter, heavy cream, mozzarella, Parmesan, and cream cheese until creamy.
3. Season chicken with salt, pepper, garlic powder. Sear in olive oil 12–15 minutes.
4. Push chicken to the side. Add garlic, butter, then stir in honey, soy sauce, and vinegar.
5. Simmer sauce 2–3 minutes until thick and sticky, coating the chicken.
6. Spoon creamy rice onto plates. Top with chicken. Garnish with parsley.
Notes
Use coconut cream for a dairy-free variation.
Store leftovers up to 3 days in fridge.
