Bold, cheesy, and easy taco spaghetti made in one skillet—perfect for busy weeknights.
Ingredients
1 pound spaghetti noodles
2 pounds ground beef
½ yellow onion, diced
1 bell pepper, diced
2 tablespoons olive oil
1 packet taco seasoning
1 can (10 oz) diced tomatoes with green chilis (undrained)
1 cup sour cream
1 cup beef broth
2 cups shredded Mexican blend cheese
Instructions
1. Cook spaghetti according to package directions. Drain and set aside.
2. Heat oil in a large skillet. Add onion and bell pepper. Sauté 3–4 minutes.
3. Add ground beef. Cook until browned. Drain fat.
4. Add taco seasoning, tomatoes (with juice), beef broth, sour cream, and 1½ cups cheese. Stir and simmer.
5. Add spaghetti to the sauce. Toss to coat.
6. Top with remaining cheese. Serve hot with optional garnishes.
Notes
Add crushed chips, hot sauce, or chopped cilantro for extra flavor.
Substitute Greek yogurt for sour cream if needed.
Freeze leftovers for up to 2 months.
