Description

A rich, savory Salisbury steak recipe inspired by Bobby Flay—smothered in mushroom gravy and perfect for one-skillet dinners.


Ingredients

For the Salisbury Steak:

4 tablespoons vegetable oil, divided

1 onion, finely diced

2 garlic cloves, minced

1 pound (500 grams) ground beef, 80% lean

⅓ cup panko breadcrumbs

1 large egg

⅓ cup tomato sauce (marinara)

1 teaspoon yellow mustard

1 teaspoon Worcestershire sauce

1 teaspoon dried oregano

¼ teaspoon ground black pepper

Salt, to taste

For the Mushroom Gravy:

1 tablespoon vegetable oil

1 onion, sliced

9 ounces (250 grams) white button mushrooms, sliced

2½ cups low-sodium beef broth

1 teaspoon onion powder

½ teaspoon garlic powder

1½ teaspoons Worcestershire sauce

3 tablespoons cornstarch

¼ cup water or beef stock

Salt and pepper, as needed


Instructions

Start by heating 2 tablespoons of oil in a skillet over medium. Sauté the finely diced onion for 4 minutes until soft, then add garlic for about 1 minute until fragrant. Set it aside to cool.

In a large bowl, combine that sautéed mix with ground beef, panko, egg, tomato sauce, mustard, Worcestershire, oregano, pepper, and salt. Mix gently with your hands—don’t overwork it to keep the patties tender.

Shape the mixture into 4 or 5 even oval steaks. Brown them in the same skillet with the remaining oil, about 1 minute per side. Set them aside.

In that same flavorful pan, cook sliced onions until golden. Add mushrooms, stir until soft. Pour in the beef broth, seasonings, and bring it to a boil.

Add the patties back into the skillet. Cover and let them simmer in the broth for 15 minutes. While they finish, stir together cornstarch and water to make a slurry, then slowly pour it in. Stir for 5 more minutes until the gravy thickens and the patties hit 160°F.


Notes

Use gluten-free panko if needed.
