Description

These mashed potato pancakes with meat filling are golden, crispy on the outside, and full of savory flavor inside. A true comfort meal, made from humble leftovers and perfect for easy, budget-friendly dinner ideas.


Ingredients

For the Mashed Potato Dough:

2 cups cold mashed potatoes

1 large egg

1/4 cup all-purpose flour (plus more for dusting)

Salt and pepper to taste

For the Meat Filling:

1 tablespoon oil

1/2 pound ground beef (or ground chicken or turkey)

1 small onion, finely chopped

1 garlic clove, minced

1/2 teaspoon paprika

Salt and pepper to taste

Fresh parsley, chopped (optional)

For Cooking:

Vegetable oil, for pan-frying


Instructions

1. Heat oil in a skillet over medium. Add chopped onion and cook until soft. Add garlic, stir for a few seconds. Add ground meat, season with paprika, salt, and pepper. Cook until browned. Stir in parsley if using. Let cool.

2. In a bowl, combine mashed potatoes, egg, flour, salt, and pepper. Mix until a soft dough forms. If too sticky, add more flour.

3. Dust hands with flour. Flatten about 2 tablespoons of dough in your palm. Add a spoonful of meat filling. Fold and shape into a patty. Repeat.

4. Heat oil in skillet. Fry pancakes for 3–4 minutes per side until golden and crispy. Drain on paper towels.

5. Serve hot with sour cream, yogurt, or your favorite sauce.


Notes

Make-ahead friendly: Store uncooked pancakes in the fridge for up to 24 hours.

Freezer tip: Freeze cooked pancakes between parchment sheets in an airtight container.
