Ingredients
- For the Meatloaf Base:
- 2 lbs ground chicken
- 1 cup grated Parmesan cheese
- 1/2 cup panko breadcrumbs
- 2 large eggs
- 4 cloves garlic, minced
- 1 tsp garlic powder
- 1 tsp onion powder
- 1/2 tsp dried basil
- 1/2 tsp dried parsley
- 1/2 tsp salt
- 1/2 tsp black pepper
- 1/4 cup whole milk
- For the Garlic Parmesan Glaze:
- 3 tbsp unsalted butter
- 2 cloves garlic, minced
- 1/4 cup grated Parmesan cheese
- 1 tbsp chopped parsley
- Pinch of salt
Instructions
Step 1: Preheat and prep your pan
Set your oven to 375°F (190°C). Line a baking sheet with parchment or grease your loaf pan for easy cleanup.
Step 2: Mix the meatloaf
In a large bowl, gently combine all the meatloaf ingredients. Don’t overmix—just fold until it holds.
Step 3: Shape and bake
Shape the mixture into a loaf by hand or press into your loaf pan. Bake 40–45 minutes until the center reaches 165°F.
Step 4: Make the glaze
Melt the butter, sauté the garlic, stir in Parmesan and parsley. Let it thicken slightly and breathe in the smell of something wonderful happening.
Step 5: Glaze and finish
Brush the glaze over the loaf and pop it back in the oven for 5–7 minutes until golden and bubbling.
Step 6: Let it rest
Pull it out, let it sit 5–10 minutes before slicing. Don’t touch it. Just breathe.
Notes
Don’t overmix your meatloaf mixture it keeps it tender.
Leftovers reheat beautifully and work great for sandwiches.
Use foil to wrap slices for freezing.
