Description
These mint chocolate chip ice cream sandwiches are made with fudgy homemade brownies and layered with creamy mint chip ice cream. Perfect frozen dessert for summer or anytime you’re craving that mint-chocolate magic.
Ingredients
For the Brownies:
½ cup (110g) canola or vegetable oil
2 large eggs, at room temperature
2 teaspoons vanilla extract
¾ cup (98g) all-purpose flour
1 cup (200g) granulated sugar
½ cup (44g) cocoa powder
¼ teaspoon salt
For the Sandwiches:
1 ½ quarts mint chocolate chip ice cream, softened slightly
Instructions
1. Preheat oven to 350°F. Grease a 9×9” pan and line with parchment paper.
2. In one bowl, whisk oil, eggs, and vanilla. In another, mix flour, sugar, cocoa powder, and salt.
3. Combine wet and dry ingredients until smooth. Spread batter into pan.
4. Bake for 13–15 minutes until set. Cool completely.
5. Cut brownie layer in half to create two rectangles.
6. Line loaf pan with parchment. Place one brownie layer in bottom.
7. Scoop softened ice cream onto brownie. Spread evenly with spatula.
8. Top with second brownie layer. Press down gently.
9. Cover and freeze at least 6 hours or overnight.
10. Remove from pan, trim edges, and cut into 8 squares.
11. Serve immediately or wrap and freeze for later.
Notes
For easier slicing, dip knife in warm water between cuts.
Use any ice cream flavor you love—mint chocolate chip pairs best with fudge brownie base.
Wrap leftovers individually in wax paper and store in freezer for up to 1 month.
