Description
No-Bake White Chocolate Cranberry Oat Clusters are chewy, creamy, and packed with oats and dried fruit. A perfect fridge snack or make-ahead holiday treat.
Ingredients
2 cups rolled oats
1 cup dried cranberries
1 cup white chocolate chips
1/2 cup almond butter
1/4 cup honey or maple syrup
1/2 teaspoon vanilla extract
Pinch of salt
Instructions
1. In a large bowl, combine oats and cranberries.
2. Melt white chocolate, almond butter, honey, vanilla, and salt in a saucepan over low heat.
3. Pour the melted mixture into the oats and cranberries and stir to coat evenly.
4. Scoop into clusters on a parchment-lined baking sheet.
5. Chill in fridge for 30 minutes until firm.
6. Store in an airtight container in the fridge.
Notes
For nut-free, use sunflower butter. Add roasted nuts or seeds for crunch. Dried cherries or apricots can replace cranberries.
