Description

This One Pot Shrimp and Creamy Garlic Tortellini is your weeknight dinner hero. Creamy, garlicky, and full of tender shrimp, it’s a quick one-pot meal made to comfort without the cleanup. Perfect for seafood lovers and busy families!


Ingredients

  • 1 lb cheese tortellini (fresh or frozen)
  • 1 lb large shrimp, peeled and deveined
  • 2 tbsp olive oil
  • 4 cloves garlic, minced
  • 1/2 cup yellow onion, chopped
  • 1/2 red bell pepper, diced
  • 1 package (10 oz) frozen spinach, thawed and squeezed dry
  • 1 tsp salt
  • 1/8 tsp pepper
  • 1 tsp Italian seasoning
  • 1 tsp onion powder
  • 1/2 tsp red pepper flakes
  • 3 cups chicken broth
  • 1 cup heavy cream
  • 1/2 cup grated Parmesan cheese (plus more for garnish)
  • 1/4 cup chopped fresh basil
  • Juice of 1/2 lemon
  • 1/4 cup sun-dried tomatoes, oil-packed and chopped
  • Zest of 1/2 lemon

Instructions

Step 1: Sauté the aromatics
Heat olive oil in a large pot over medium heat. Add garlic and onion, cook for 3 minutes until soft and fragrant.

Step 2: Add the veggies
Stir in bell pepper and thawed spinach. Cook for 4–5 minutes until tender.

Step 3: Season and cook the shrimp
Add salt, pepper, onion powder, Italian seasoning, and red pepper flakes. Stir. Add shrimp and cook 3–4 minutes per side. Remove and set aside.

Step 4: Simmer the tortellini
Pour in chicken broth. Bring to a simmer. Add tortellini and cook per package instructions (fresh: 3–5 min, frozen: 7–9 min).

Step 5: Make it creamy
Lower heat. Stir in heavy cream, Parmesan, lemon juice, zest, and sun-dried tomatoes. Mix until creamy.

Step 6: Bring it together
Return shrimp to the pot. Stir in basil. Taste and adjust seasoning.

Step 7: Serve and garnish
Spoon into bowls, top with extra Parmesan and basil. Serve warm.


Notes

Use fresh or frozen tortellini adjust cook time accordingly.

Sauté shrimp separately to avoid overcooking.

Optional: add more crushed red pepper for heat or serve with crusty garlic bread for dipping.
