A comforting, cheesy, and healthy veggie bake, perfect for gluten free family meals and low carb dinners. This Oven Baked Zucchini and Cheese is warm, simple, and always satisfying.
Ingredients
4 medium Zucchinis, sliced
1 cup Shredded Mozzarella Cheese
1/2 cup Grated Parmesan Cheese
1/2 cup Breadcrumbs
2 tablespoons Olive Oil
1 clove Garlic, minced
1 teaspoon Dried Oregano
Salt to taste
Pepper to taste
Fresh Basil for garnish (optional)
Instructions
1. Preheat your oven to 375°F (190°C). Grease a medium baking dish or line with parchment.
2. Wash and slice zucchinis into 1/4-inch rounds. Add to a large bowl.
3. Drizzle zucchini with olive oil. Add garlic, oregano, salt, and pepper. Toss to coat.
4. In another bowl, mix mozzarella, Parmesan, and breadcrumbs.
5. Layer half the zucchini in the dish. Sprinkle with half the cheese mix.
6. Repeat the layers. Finish with the rest of the cheese and breadcrumb mix.
7. Bake on the middle rack for 20 to 25 minutes until golden and bubbly.
8. Let cool slightly. Garnish with basil if desired. Serve warm.
Notes
For a gluten-free version, use gluten-free breadcrumbs or crushed rice crackers.
Add cherry tomatoes or cooked mushrooms for extra flavor.
Reheat in the oven to maintain texture microwave softens the topping.
