Description
A one-pan Queso Chicken Fajita Skillet with juicy chicken, colorful bell peppers, and creamy queso cheese. This Tex-Mex comfort dish is quick, flavorful, and perfect for family weeknights.
Ingredients
3 boneless skinless chicken breasts, diced
2 tablespoons olive oil
½ yellow onion, diced
1 red bell pepper, sliced into strips
1 green bell pepper, sliced into strips
1 orange bell pepper, sliced into strips
1 packet fajita seasoning
2 cups Minute Rice
2 cups chicken broth
8 ounces tomato sauce
1 cup Gordos cheese dip (or favorite queso)
Instructions
1. Warm olive oil in a large skillet over medium-high heat. Add onions and all three peppers; cook 2–3 minutes until soft and bright.
2. Toss in the diced chicken and fajita seasoning. Stir often until fully cooked and golden.
3. Stir in rice, tomato sauce, and broth. Bring to a gentle simmer and let it bubble 2 minutes.
4. Turn off the heat. Cover and let the rice drink up the broth until tender.
5. Pour Gordos cheese dip over the skillet. Let it melt and coat everything. Serve warm.
Notes
Stuffani’s Note: For a low-carb version, use cauliflower rice.
You can also substitute rotisserie chicken for a faster dinner option.
