Ingredients
1 (32 oz) bag frozen hash browns
1 can (10.5 oz) cream of chicken soup
1 cup sour cream
1/2 cup butter, melted
2 cups shredded sharp cheddar cheese
1 small onion, diced
2 cups diced ham
Salt and pepper to taste
Instructions
1. Preheat oven to 375°F. Grease a 9×13-inch baking dish.
2. In a large mixing bowl, combine frozen hash browns, cream of chicken soup, sour cream, melted butter, cheddar cheese, diced onion, diced ham, salt, and pepper.
3. Mix thoroughly until evenly combined.
4. Spread mixture evenly into the prepared baking dish.
5. Bake uncovered for 35–40 minutes, until bubbly and golden brown on top.
6. Let the casserole cool for 5–10 minutes before serving. Garnish with chopped chives if desired.
Notes
You can prep this casserole the night before just cover and refrigerate, then bake when ready.
Swap ham for cooked chicken or bacon if preferred.
Use gluten-free cream of chicken soup to make the dish gluten-free.
