Description

8 oz white chocolate, chopped

3 cups powdered sugar, sifted

1 teaspoon vanilla extract

23 tablespoons heavy cream


Instructions

Carefully melt white chocolate using either the double-boiler method or microwave at 50% power in 30-second intervals, stirring between each. Allow to cool slightly.

In a medium bowl, whisk together flour, baking powder, and salt.

In a large bowl, cream butter and sugar until light and fluffy, about 3-4 minutes.

Beat in egg yolks one at a time, then add vanilla and melted white chocolate.

Alternate adding dry ingredients and buttermilk to butter mixture, beginning and ending with dry ingredients. Mix just until combined.

In a clean bowl with clean beaters, whip egg whites until stiff peaks form.

Gently fold egg whites into batter until no white streaks remain.

Pour batter into prepared pans and bake according to specific recipe instructions.

For frosting: Melt white chocolate and allow to cool slightly. Beat butter until creamy, then add melted white chocolate. Gradually add powdered sugar, vanilla, and cream until smooth and fluffy.
