These Rotel Spiced Sausage and Cream Cheese Bites are packed with bold flavor, cheesy goodness, and the perfect hint of heat. Ideal for parties, holidays, or make-ahead snacks.
Ingredients
1 lb breakfast sausage
8 oz cream cheese, softened
1 can (10 oz) Rotel tomatoes with green chilies, drained
1½ cups shredded cheddar cheese
1½ cups baking mix (Bisquick or similar)
½ teaspoon cayenne pepper (optional)
Instructions
1. Preheat your oven to 375°F (190°C). Line a baking sheet with parchment paper.
2. In a large bowl, combine sausage, cream cheese, drained Rotel, cheddar, baking mix, and cayenne.
3. Mix thoroughly until combined. Shape into 1-inch balls.
4. Place balls on the prepared baking sheet, spaced evenly.
5. Bake for 18–20 minutes, until golden and fully cooked.
6. Cool slightly and serve warm with dip, or as-is.
Notes
You can prepare the mixture a day ahead and chill it before baking.
Freeze uncooked bites for quick snacks later—just add 2–3 minutes to bake time.
