Ingredients
6 slices rye bread, divided
1 pound pastrami or corned beef, thinly sliced
1 (14.5 oz) jar sauerkraut, drained
4 cups shredded Swiss cheese, divided
2 teaspoons caraway seeds, divided
1 cup chopped dill pickles
1 cup milk
3 large eggs, beaten
⅓ cup creamy dressing (like thousand island)
¼ cup yellow mustard
Instructions
1. Preheat oven to 350°F (175°C). Grease a 9×13-inch baking dish.
2. Cut four slices rye bread into cubes; layer in dish. Pulse two slices into breadcrumbs; set aside.
3. Layer half the pastrami, sauerkraut, dill pickles, and 1 tsp caraway seeds. Top with 2 cups Swiss.
4. Add remaining pastrami, press gently. Sprinkle 2 cups Swiss and 1 tsp caraway seeds on top.
5. Whisk milk, eggs, dressing, and mustard. Pour evenly over casserole.
6. Top with breadcrumbs, cover with foil, bake 45 minutes.
7. Rest 5 minutes before slicing and serving warm.
