Description
These shrimp and crab nacho bomb corn dogs are loaded with creamy cheese, seafood flavor, and wrapped in crispy cornmeal batter. They’re deep-fried, bold, and perfect for game day or weekend snacks.
Ingredients
1 cup shrimp, peeled and deveined
1 cup crab meat, shredded
1 cup cheddar cheese, shredded
1 cup nacho cheese sauce
1 cup cornmeal
1 cup all-purpose flour
1 tablespoon baking powder
1 teaspoon salt
1 teaspoon paprika
1 cup buttermilk
2 large eggs
Vegetable oil for frying
Wooden skewers
Instructions
1. Chop shrimp and combine with crab meat and cheddar cheese; mix in nacho cheese sauce.
2. In one bowl, mix cornmeal, flour, baking powder, salt, and paprika. In another, whisk buttermilk and eggs; then combine the wet and dry mixtures.
3. Insert skewers into spoonfuls of the seafood mixture to create corn dog shapes. Dip into the cornmeal batter until fully coated.
4. Heat vegetable oil to 350°F and fry each corn dog for 3–4 minutes per side, until golden and crisp.
5. Drain on paper towels. Serve hot with your favorite dipping sauce.
Notes
Make sure seafood mix is chilled slightly if it’s too soft to skewer.
Use an ice cream scoop to portion the filling evenly.
Great for freezing: freeze battered corn dogs before frying for later.
