These simple cheesy stuffed meatloaf bites are the ultimate kid-friendly ground beef dinner quick to prep, loaded with melty cheese, and perfect for busy weeknights.
Ingredients
1 lb ground beef
1/2 cup breadcrumbs
1/4 cup milk
1 large egg
1 small onion, finely chopped
2 cloves garlic, minced
1 tsp salt
1/2 tsp black pepper
1 tsp Worcestershire sauce
1/2 cup ketchup, divided
1 tbsp mustard
3–4 oz cheddar or mozzarella cheese, cubed
Fresh parsley, chopped (optional for garnish)
Instructions
1. Set the oven to 375°F (190°C). Grease a mini muffin tin even if it’s nonstick.
2. In a large bowl, combine ground beef, breadcrumbs, milk, egg, onion, garlic, salt, pepper, Worcestershire, 1/4 cup ketchup, and mustard. Mix with your hands until just combined.
3. Scoop about 2 tablespoons of the meat mixture, flatten it, place a cheese cube in the center, and gently roll into a ball. Don’t press too tightly. Place each ball into the muffin tin.
4. Mix the remaining 1/4 cup ketchup with mustard and spoon a bit on top of each bite.
5. Bake for 18–22 minutes or until golden and cooked through (internal temp should be 160°F).
6. Let rest for 5 minutes before serving. Garnish with chopped parsley if desired.
Notes
Serve with a dipping sauce like garlic mayo or spicy ketchup for extra flavor.
These bites also freeze well great for lunchbox prepping or future meals.
Use mini muffin tins for even portions and crispy edges.
