Description

This Sloppy Joe Potato Skillet is a cheesy, budget-friendly comfort meal made with ground beef, crispy potatoes, and a rich tomato-based sauce. It’s a one-pan weeknight favorite perfect for family dinners under $10.


Ingredients

1 lb ground beef

5 small or medium potatoes, peeled & cubed

1 cup shredded cheddar cheese

1 onion, chopped

2 tbsp olive oil

1 (8 oz) can tomato sauce

¼ cup ketchup

2 tbsp BBQ sauce

1 tbsp mustard

1–2 tbsp Worcestershire sauce

1 tbsp minced garlic

1 tsp onion powder

1 tsp paprika

½ tsp salt

½ tsp black pepper

Salt, pepper, garlic powder, paprika (to season potatoes; to taste)


Instructions

1. Toss cubed potatoes with olive oil, salt, pepper, garlic powder, and paprika. Air fry at 400°F for 20 minutes, shaking halfway through.

2. While potatoes cook, heat a large skillet over medium. Add ground beef and onion. Cook until beef is browned and onion is soft. Season with salt, pepper, onion powder, and paprika.

3. Add minced garlic. Stir and cook for one more minute.

4. Pour in Worcestershire, tomato sauce, ketchup, mustard, and BBQ sauce. Stir to combine and lower the heat. Let simmer for 5–10 minutes to thicken.

5. Add crisp potatoes to the skillet. Stir gently to coat in the sauce.

6. Top with shredded cheddar cheese.

7. Place skillet under the broiler for 1–2 minutes, just until the cheese is melted and bubbly.

8. Serve hot and enjoy!


Notes

No air fryer? Roast potatoes in the oven at 425°F until crispy.

Great for meal prep just store in an airtight container for up to 3 days.

This recipe is easily customizable with sweet potatoes, bell peppers, or veggie crumbles.
