Ingredients
3 ¼ cups all-purpose flour (plus more for dusting)
2 ¼ tsp instant yeast (1 packet)
½ cup warm milk
¼ cup warm water
⅓ cup sugar
1 large egg, room temp
3 tbsp unsalted butter, softened
½ tsp salt
Oil, for frying
For coating:
½ cup sugar (or cinnamon sugar)
2 tbsp melted butter (optional, for brushing before coating)
Instructions
1. In a small bowl, mix warm milk, warm water, yeast, and 1 tbsp sugar. Let sit 5 minutes until foamy.
2. In a large bowl, combine flour, remaining sugar, and salt. Add yeast mixture, egg, and butter.
3. Knead 8–10 minutes until smooth and elastic. Place in a greased bowl, cover, and let rise 1–1 ½ hours until doubled.
4. Punch down dough, divide into 10–12 pieces. Roll into ropes and twist two together. Place on a tray, cover, and let rise 30–40 minutes.
5. Heat oil to 325–340°F (165–170°C). Fry twists 1–2 minutes per side until golden. Drain on paper towels.
6. While warm, brush with melted butter (optional) and roll in sugar or cinnamon sugar. Serve fresh.
Notes
For lighter donuts, bake at 350°F instead of frying.
For vegan version, swap egg with flax egg, and use plant-based milk and butter.
