Description

Creamy, no-bake Strawberry Cheesecake Banana Pudding with layers of vanilla wafers, whipped cheesecake, fresh strawberries, and pudding. Easy to prep and perfect for chilled dessert lovers.


Ingredients

For the cheesecake layer:

1 (8 oz) package cream cheese, softened

1 cup heavy whipping cream

1/2 cup powdered sugar

1 tsp vanilla extract

For the pudding layer:

1 (5.1 oz) box vanilla instant pudding mix

2 cups cold milk

For the dessert:

1 box vanilla wafers (or other cookies)

2 bananas, sliced

1 cup fresh strawberries, chopped (plus extra for garnish)

Crushed strawberry wafers (optional)


Instructions

1-Prepare the cheesecake layer:
In a medium bowl, beat the softened cream cheese until completely smooth. Add the powdered sugar and vanilla extract, and continue beating until fully combined and creamy. 

2-In a separate bowl, whip the heavy cream until stiff peaks form, then gently fold it into the cream cheese mixture until smooth and fluffy. Set aside.

3-Prepare the pudding layer:
In a clean bowl, whisk the instant vanilla pudding mix with cold milk for about 2 minutes, until it thickens. Set the pudding aside and let it sit for a few more minutes to firm up slightly.

4-Assemble the pudding layers:
In a large serving dish or individual cups, start by placing a layer of vanilla wafers at the bottom. Add a layer of banana slices and fresh chopped strawberries on top of the wafers. Spoon a layer of the cheesecake mixture over the fruit, then spread a layer of vanilla pudding over the cheesecake layer. Repeat the layers in the same order as needed, depending on the depth of your dish.

5-Top and chill:
Finish the top layer with more chopped strawberries and crushed strawberry wafers if you like. Cover the dish tightly and refrigerate for at least 3 hours, or preferably overnight, to let the pudding firm up and the flavors meld.

6-Serve and enjoy:
Serve the dessert chilled, and enjoy each creamy, fruity, and sweet layer of this indulgent no-bake treat.


Notes

Can be made 1 day in advance.

For best flavor, use ripe but firm bananas.
