Description

These no bake strawberry cheesecake protein bars combine a chewy vanilla protein crust with a creamy strawberry yogurt topping. Perfect as a sweet, healthy snack.


Ingredients

1/2 cup vanilla protein powder

1/23/4 cup almond butter

1/4 cup maple syrup

1 tsp vanilla extract

1 cup coconut yogurt

1/4 cup freeze-dried strawberry powder

1 tbsp maple syrup

1 tsp vanilla extract

1/4 cup freeze-dried strawberries


Instructions

1. In a large bowl, combine all crust ingredients and mix into a cookie dough consistency.

2. Line an 8×8 pan with parchment and press in the crust evenly.

3. Freeze for 1 hour to firm the base.

4. In another bowl, mix the yogurt, strawberry powder, maple syrup, and vanilla for the topping.

5. Spread cheesecake mixture over the frozen crust evenly.

6. Sprinkle with freeze-dried strawberries and return to the freezer for 2–3 hours.

7. Remove, slice, and serve after thawing for 3–5 minutes.


Notes

Keep bars stored in the freezer. Let sit out for 3–5 minutes before serving for best texture.
