These Strawberry Shortcake Cheesecake Rolls are creamy, fruity, and wrapped in sweetness. With a light crepe base, fresh strawberries, and cheesecake filling, they’re one of my favorite easy dessert recipes for families quick, no bake, and budget-friendly.
Ingredients
8 oz cream cheese, softened
1/4 cup granulated sugar
1 teaspoon vanilla extract
1 cup heavy whipping cream
1 cup fresh strawberries, diced
2 tablespoons granulated sugar
1 1/2 cups crushed shortbread cookies or graham crackers
1/4 cup unsalted butter, melted
6 large crepes or thin cake layers
Powdered sugar, for dusting
Instructions
1. Beat cream cheese, sugar, and vanilla until smooth.
2. Whip heavy cream to stiff peaks and fold into cream cheese mixture.
3. Mix diced strawberries with sugar and let sit 10 minutes to macerate.
4. Combine crushed cookies with melted butter until sandy in texture.
5. Lay out crepe, spread cream, sprinkle crumbs, and top with strawberries.
6. Roll tightly like sushi, wrap in plastic, and refrigerate 1 hour.
7. Slice into 1-inch pieces, dust with powdered sugar, and serve.
Notes

Stuffani’s Whisper: I’ve made these with blueberries and lemon zest when strawberries were scarce. They still carried the same sweetness of home.
