Description

Crispy, golden, and endlessly versatile these Stuffed Mashed Potato Nests are comfort in every bite. Perfect for high-protein potato recipes, quick and cheap meals, and even easy brunch recipes with eggs. A family favorite that always feels special.


Ingredients

4 large Russet potatoes, peeled and chopped

1 egg, beaten

½ cup shredded cheddar or mozzarella (optional)

1 teaspoon salt

½ teaspoon black pepper

2 tablespoons flour or breadcrumbs

Baking spray or oil for muffin tin/frying

Fillings:

1 cup cooked ground turkey, seasoned

3 scrambled eggs

1 cup sautéed spinach & mushrooms with garlic

½ cup shredded cheddar cheese

¼ cup sour cream (optional)

2 tablespoons chopped chives


Instructions

1. Peel, chop, and boil potatoes in salted water until fork-tender, about 15–20 minutes. Drain and mash while warm.

2. Mix in egg, salt, pepper, cheese (if using), and flour/breadcrumbs. Stir until the mixture holds together.

3. Spoon into greased muffin tin, pressing up the sides to form nest shapes.

4. Bake at 400°F for 20–25 minutes until golden OR fry in a skillet with oil until crisp.

5. Fill nests with turkey, eggs, spinach, or your favorite toppings. Sprinkle cheese, chives, or sour cream. Serve warm.
