Ingredients
4 large Russet potatoes, peeled and chopped
1 egg, beaten
½ cup shredded cheddar or mozzarella (optional)
1 teaspoon salt
½ teaspoon black pepper
2 tablespoons flour or breadcrumbs
Baking spray or oil for muffin tin/frying

2 tablespoons chopped chives
Instructions
1. Peel, chop, and boil potatoes in salted water until fork-tender, about 15–20 minutes. Drain and mash while warm.
2. Mix in egg, salt, pepper, cheese (if using), and flour/breadcrumbs. Stir until the mixture holds together.
3. Spoon into greased muffin tin, pressing up the sides to form nest shapes.
4. Bake at 400°F for 20–25 minutes until golden OR fry in a skillet with oil until crisp.
5. Fill nests with turkey, eggs, spinach, or your favorite toppings. Sprinkle cheese, chives, or sour cream. Serve warm.
Notes
Stuffani’s Note: These nests don’t need perfection. Even cracked edges taste like comfort.
Stuffani’s Whisper: Try swapping fillings bacon & cheese, chicken & veggie, or a breakfast brunch version with eggs and sausage. My mom taught me that recipes bend with love, not rules.
