Ingredients
2 large onions, peeled and sliced into thick ½-inch rings
8 oz mozzarella cheese, cut into sticks or thick slices
½ cup mini pepperoni slices (or chopped regular pepperoni)
1 cup all-purpose flour
3 large eggs, beaten
2 cups panko breadcrumbs
1 cup Italian-style breadcrumbs
1 tsp garlic powder
1 tsp Italian seasoning
½ tsp paprika
Salt & black pepper, to taste
Oil, for frying (best oil for deep frying: vegetable or canola)
Warm marinara or pizza sauce, for dipping
Instructions
1. Slice onions into ½-inch rings. Pair two similar-sized rings. Tuck mozzarella and pepperoni inside, pressing gently to seal.
2. Place stuffed onion rings on a baking sheet. Freeze 20–30 minutes so they hold their shape.
3. Set up breading station: one bowl flour, one with eggs, one with breadcrumbs and spices. Dip each ring in flour, egg, then crumbs. Repeat egg + crumbs for extra crunch.
4. Heat oil in a deep skillet or fryer to 350°F (175°C). Fry 2–3 rings at a time until golden, about 2–3 minutes per side. Drain on paper towels.
5. Serve hot with marinara or your favorite sauce. Optional: sprinkle with parsley or Parmesan.
