Ingredients
1 pound smoked sausage, sliced
4 medium potatoes, diced
2 tablespoons olive oil
1/4 cup brown sugar
1/4 cup soy sauce
2 tablespoons Dijon mustard
1 teaspoon garlic powder
1 teaspoon onion powder
Salt and pepper to taste
Fresh parsley, chopped (for garnish)
Instructions
1. Preheat your oven to 400°F (200°C).
2. In a large bowl, toss diced potatoes with olive oil, salt, and pepper.
3. Spread the potatoes on a baking sheet and roast for 20 minutes, stirring halfway.
4. Meanwhile, whisk together brown sugar, soy sauce, Dijon mustard, garlic powder, and onion powder until smooth.
5. Remove potatoes from oven, add sliced smoked sausage, and drizzle glaze over everything. Toss gently to coat.
6. Return to the oven and roast for another 15–20 minutes until potatoes are tender and sausage caramelized.
